There is a sausage...Your stuffing sounds wonderful. There is a sausage kiosk in Pike Place that does a pretty nice boerewors. I do one of dried apricots, pancetta and a boatload of thyme. I'm not going to lie, it rocks. I rub the turkey down under the skin with butter, thyme, s&p, then switch it up a little for the legs. There, I cut little slits and stuff them full of rosemary and pancetta.
